Spicy Crunchy Chickpeas
These crunchy chickpeas are a great healthy snack on their own or thrown over a salad or grain bowl.
1.Pre-heat oven to 400 °F and line baking tray with parchment paper.
2. Make sure chickpeas are dried.
3. Slice garlic head in half and place on baking tray (cut side up or down - either is fine).
4. Spread chick peas over the tray and drizzle with olive oil and spice blend.
5. Shake the tray to make sure all the chickpeas are well coated and roast for 40 mins, shaking the pan periodically to make sure they are not burning
These are best eaten fresh, but will last in an airtight container for up to 2 weeks. You can always re-heat in the oven to re-crisp before serving.
