Gluten-free and vegan, no added sugar
¾ cup chopped nuts and seeds (use your preferred mix – we use cashews, pecans, almonds, walnuts and sunflower seeds)
½ cup Whole Seed Tahini
½ cup maple syrup
¼ cup cacao powder
1 tsp vanilla
¾ cup desiccated coconut plus extra for rolling
¼ cup finely chopped pistachios for rolling
Process nuts and seeds in a food processor until the mix is evenly crushed. Add remaining ingredients to the food processor and process until mixture comes together in a dough (add more coconut if mixture is too sticky). Roll the mix into balls and then roll around in some extra coconut or pistachios to coat).
Makes approximately 12 balls. These can be stored in the fridge of freezer. They are super yummy when eaten straight from the freezer!
