INGREDIENTS
For the salad
4 ears of fresh corn
1 lb mixed ripe tomatoes, roughly chopped
½ red onion, thinly sliced
1 lime, juiced
½ cup of fresh basil leaves or cilantro, or a combination of both
3 tbs or generous drizzle of Seed + Mill Spicy Tahini, Regular Tahini, or a combination of both
1-2 tbsp EVOO
Salt & pepper to taste
METHOD
Heat up your grill. Remove husks from the corn and rub with olive oil. Place on hot grill for 5-8 minutes, turning frequently to char the corn. Once cooled, slice off the corn kernels and set aside.
To assemble: place tomatoes, onion and corn on a platter. Top with torn basil leaves or cilantro, squeeze over the lime juice, drizzle with tahini. Season with salt and pepper to your preference.
