Quick Pickled Cucumber Salad with Tahini 麻醬醃漬小黃瓜沙拉
We had so much fun in the kitchen with our friend @chopsticksmeetfork, making this Quick Pickled Cucumber Salad with Tahini! It's cool & refreshing, making it the perfect side for these hot summer months!
6-7 baby cucumbers
1/2 tbsp salt
2 tsp sugar
3-4 tbsp, rice vinegar
1 tbsp Seed + Mill Tahini, plus more to taste
Toasted sesame seeds, to garnish
Wash and dry the cucumber. Halve vertically twice. Now you will have four long strips for each cucumber. Seed the cucumber if preferred. Cut the cucumber strips into 2” long sticks.
Place the cucumber in a ziplock bag together with the salt, sugar, and rice vinegar. Close the bag and mix everything together. Set in the fridge for at least 30 minutes. Mix the ingredients again half way.
Right before serving, drain the liquid in the bag. Place the cucumber in a bowl and drizzle in 1 TBS. Mix to coat. Transfer the cucumber to a serving platter. Drizzle on some more tahini, scatter on the sesame seeds. Serve chilled/ cold.
