You may find their halva-like texture a bit different at first, but trust me, a sip of coffee or tea between bites will let their flavor unfold and soon have you craving more. These cookies are the epitome of a unique taste experience, and despite any initial texture surprises, I am confident you'll love them as much as I do. The key to this recipe is the high-quality tahini-- the right tahini will be very finely ground with a consistency similar to honey. Serve with lots of tea or coffee.
INGREDIENTS
1 c (250g)
Seed + Mill Organic Tahini
½ c (60g) powdered sugar
¼ c (55g) peanut oil or other neutral oil
2 c (260g) all purpose flour
Crushed roasted walnuts or hazelnuts, we used sesame seeds
STEPS
- Preheat oven to 350°. Line a baking sheet with parchment paper.
- In a medium bowl, combine the tahini, powdered sugar, peanut oil and vanilla. Add the flour and knead the dough with your hands for 4 to 5 minutes until everything is well combined and it is a cookie dough texture.
- Place the nuts in a small bowl. Scoop out 1 ½ tbsp of dough and roll it in a ball on the palm of your hand. Coat the top with the crushed nuts and place on the prepared baking sheet. Repeat with the remaining dough.
- Bake until lightly golden brown, 13 to 15 minutes.
- Let cool fully on the pan before serving.
