This recipe comes from our friend Woldy Reyes. "During the holidays, my family’s table is always overflowing with food, but the dish I love most is Pancit—a savory Filipino stir-fried noodle dish. My version of pancit has a fresh twist, featuring raw vegetables tossed in an umami dressing with sweet, chewy noodles that add a hearty texture."
INGREDIENTS
1lb sweet potato noodles
½ c carrots, shredded
½ c watermelon radish, thinly sliced
½ c celery, thinly sliced on a diagonal
½ c cilantro, chopped
¼ unsalted roasted chopped peanuts
Olive oil for noodles
DRESSING
⅓ c
Seed + Mill Organic Tahini
½ c sweet chili sauce
¼ c unseasoned rice vinegar
3 tbsp tamari
2 tbsp sriracha
2 tbsp sesame oil
3 tbsp water
2 garlic cloves, minced
3 inch fresh ginger, grated
STEPS
2. In a separate bowl, whisk together the tahini, sweet chili sauce, rice vinegar, tamari, sriracha, water, garlic, and ginger. Season with salt and pepper to taste. Pour the dressing over the noodles and toss to combine.
