"I discovered date shakes when I traveled to Palm Springs, California, as an adult-- but I wish I had known about them much sooner, as they combine two of my childhood favorites: sweet dates and rich milkshakes. This is my sophisticated version made with classic Middle Eastern ingredients like tart labne and fragrant orange blossom water. It's a lighter shake made without ice cream and naturally sweet from both dates and concentrated date molasses. The recipe can easily be doubled to serve four."
INGREDIENTS
1 c pitted dates
1 c boiling water
1 c cold water
1/2 c labne or greek yogurt
2 tbsp silan (date molasses)
2 tbsp Seed + Mill Organic Tahini
1/2 tsp orange blossom water, optional
1 c ice
STEPS
- Put the dates in a heatproof medium bowl, cover with the boiling water, and set aside for 5 minutes to soften. Drain the dates, discarding the water.
- Transfer the dates to a blender and add the water, the labne, silan, tahini, and orange blossom water. Blend until smooth.
- Add the ice and blend again until smooth and thick. Serve immediately.
Serves 2.
