Sheet Pan Latkes With All Your Favorite Sesame Toppings

 

Inspired by our friend Adeena Sussman, we decided to test out her recipe for sheet pan potato latkes and let's just say, we're never going back to the more traditional version. This latke technique is genius! It cuts out so much of the work and means no more hovering over a fry pan filled with hot splattering oil.

Serve this for a Hanukkah-inspired dinner and get creative with a generous selection of colorful, sweet and savory “sesame inspired” toppings.


INGREDIENTS
 
For the Latkes:

1¾–2 lbs skin-on potatoes, scrubbed
1 medium to large onion, peeled
2 eggs
2 tsp kosher salt, plus more to taste
¼ cup potato starch or all-purpose flour
¼–⅓ cup olive oil


STEPS

For the Latkes:

1. Preheat the oven to 450°F.

2. Grate the potatoes and onions on the large holes of a box grater into a large bowl. Place the mixture into the center of a clean dish towel and, using both hands, squeeze out and discard as much of the liquid as possible (you might be surprised by the amount of liquid that can be extracted!). 

3.Once you have squeezed out as much liquid as you can, transfer the potatoes to a mixing bowl and set aside.

4. Add the oil to a quarter-sheet pan (or 9 x 13-inch glass or metal baking dish) and place into the hot oven until the oil is very hot but not smoking, about 7 to 8 minutes.

5. While the oil is heating up, stir the eggs, salt, and potato starch or flour into the potato-onion mixture.

6. Carefully remove the sheet pan from the oven. Quickly spread the latke batter across the pan in an even layer. Tip and spoon any excess oil over the top and give the top one final drizzle of olive oil before placing back in the oven. Bake until deep golden brown and crisp, 20 to 25 minutes (or longer as needed).

7. Use a paper towel to drain any excess oil.

Topping Ideas

  • Chocolate Sesame Sauce, pistachios, and crumbled halva

  • Lemon Tahini Sauce with smoked salmon

  • Shredded radicchio, radish, and spicy tahini

  • Tahini drizzle duos (chocolate and classic, or spicy and classic)

Lemon Tahini Sauce

  • ½ cup Organic Tahini

  • ¼ cup iced water

  • Juice of ½ lemon

  • Salt and pepper to taste

Whisk everything together in a small bowl until smooth.
